RECIPES

ONE OF MY FAVORITE RECIPES FOR A SUNDAY DINNER
Turkey en Papillote with Vegatables:

1 1/2 lbs turkey breast
4 cups broccoli
2 cups zucchini diced
2 cups mushrooms sliced 1/2" thick
1 teaspoon thyme leaves
1 cup Walden Farms Tomato and Basil Sauce
3 teaspoons olive oil 3 teaspoons Dijon mustard
1 tablespoon mustard powder
sea salt to taste
pepper to taste

Saute zucchini in olive oil. Season and set aside. Saute mushrooms sliced in same pan and set aside.
Season the turkey and baste with mustard. Cut aluminum into a 12" square. Add turkey, zucchini, mushrooms and Tomato and Basil sauce. Sprinkle with thyme and drizzle olive oil. Salt and pepper to taste. Close the foil to a hermetic square.
Bake in oven for 30 minutes at 375 degreees or until turkey is cooked and still juicy. Dissolve mustard powder in 4 cups of water. Bring to a boil and add salt. Cook the broccoli in this liquid.
Serve the turkey and vegetables with the broccoli.

Per serving 375 Calories; 22g Fat; 38g Protein; 8 Carbohydrate

  1. Big Mac Bowl

    1/4 pound lean ground beef
    1tsp minced dried onion (reconstituted)
    pinch sea salt & black pepper
    1 1/2oz dill pickles sliced
    2Tbsp. Walden Farms Thousand Island Dressing
    1 1/2oz shredded lettuce

    Brown the ground beef. Layer bowl with lettuce, top with cooked ground beef, dressing, and pickles.

  2. MINI SEASONED FLATBREAD

    1 packet of Ideal Protein Crepe
    6oz water
    1Tbsp dried or fresh dill
    1/2tsp sea salt
    1tsp cayenne pepper (optional)

    Preheat oven to 350*. Mix all ingredients together in a shaker to blend perfectly. Shake often to keep a consistent mixture. Use a non-stick muffin pan and add 1tsp of mixture in each cup. Cook in oven for 12-15 min or until cooked & crispy. Makes approx. 30 mini crepes. Top with chili or any other healthy creation. Could also be used to replace chip cravings if really crispy.

  3. Ideal "Mashed Potatoes"

    1 Head of fresh cauliflower
    Onion powder
    Garlic powder
    Sea Salt, to taste
    1/2 to 1 packet Ideal Protein Leek soup or Ideal Protein Chicken Soup

    Boil the cauliflower until it is very, very, soft. Drain the water. Add the seasonings and choice of any of the soup mixes. Mash well and serve steaming hot.

  4. Turnip Chips

    Slice turnips about 1/4 inch thick. A mandolin works perfectly for uniform chips and takes about 10 seconds to slice. Take a nonstick baking sheet and use a pastry brush to coat the pan with olive oil. You could also use baking spray to save some fat calories. Arrange the turnip slices on the pan. Brush the turnip slices with olive oil or evenly coat with your Misto. Salt generously with seasalt. Bake at 425 for about 10 minutes per side. You want them to get nice and brown on each side.

  5. Kale Chips

    2 cups fresh kale leaves
    Olive oil nonstick spray
    Dash salt, or more to taste

    Preheat oven to 425 degrees.

    Place kale leaves on a baking sheet sprayed with olive oil nonstick spray. Spritz leaves with the nonstick spray and sprinkle with salt. If you're going to wash the kale make sure to dry with paper towels thoroughly or they'll be soggy instead of crispy.

    Bake in the oven until crispy, 5 - 8 minutes, for a potato-chip-like snack. Be careful and watch carefully as they'll burn really fast. One minute they won't be done and within 30 seconds they can go too far.

    If you like, season to taste with additional salt. Eat up!

  6. Shannon's One Bite Brownies

    1 Ideal Protein Pudding Package (I used Dark Chocolate)
    2 oz water
    1 tsp vanilla extract
    2 egg whites

    Preheat oven to 350 degrees
    spray mini muffin tin with a small amount of Pam cooking spray
    Beat/whisk water, egg whites, and vanilla thoroughly
    Fold in Ideal Protein Pudding pkg until just combined
    Pour mixture into mini muffin tins
    Bake for about 10 minutes

    Makes about 8 mini (one bite) brownies. Yum!

  7. NON-Restricted Pancakes

    1 Pkg Crispy Cereal, crunched up (use a rolling pin while still in sealed package)
    2 Egg Whites
    1/4 tsp Baking Powder
    1/4 tsp Vanilla
    Cinnamon & Nutmeg to taste

    Beat together in small bowl:
    egg whites & vanilla

    Add in to cereal pkg:
    baking powder, cinnamon, and nutmeg

    Pour dry mix into egg mixture. Combine. Spray griddle with non-stick spray (Pam). Cook as you would pancakes.

    Delicious topped with warmed Walden Farms Pancake Syrup.
    Makes 4-5 pancakes

  8. Tasty Meat Muffins

    2 lbs ground turkey, chicken, bison or beef
    1 Tbsp dried onion flakes
    2 cloves minced garlic or 1 tsp. garlic powder
    1 tsp dry mustard
    1 tsp dried thyme
    1 tsp dried sage
    1/2 tsp black pepper
    2 tsp sea salt
    2 Tbsp Worcestershire sauce
    1 egg
    1/4 cup water (add last may need to adjust depending on consistency, shouldn’t be too wet!)

    Optional: 1 finely chopped celery stalk and some shredded zucchini (or allowed veggies of choice).

    Preparation
    Mix all ingredients together in a bowl. Using your hands is easiest, but don’t over mix. Bake at 350F for about 1 hour for a large loaf. Bake for 15-20 minutes for muffin-cup meatloaves. About 10-15 minutes before you think the meatloaf will be done, you can cover it with Walden Farms BBQ sauce or Marinara sauce.

  9. Garlic Lime Chicken

    6 chicken breast halves
    Zest & juice of 1 lime
    1/3 cup olive or grapeseed oil
    2 Tbsp white vinegar
    2 cloves garlic – crushed
    1/4 tsp crushed red pepper flakes
    1/4 tsp ground cumin
    1/4 tsp sea salt
    1/4 bunch fresh cilantro – chopped

    Preparation
    Combine marinade ingredients & mix well. Marinate chicken breasts for 20 to 30 minutes in the refrigerator. Preheat barbeque. Drain chicken from marinade and discard the marinade. Grill 5-7 minutes per side until internal tem reaches 170F/77C.

  10. Chocolate Mug Cake

    1 Pkg Chocolate Drink mix
    1 Egg White
    1 tsp Baking Powder
    1 Tbsp Olive Oil
    1 tsp Splenda or Stevia
    1/4 tsp vanilla

    Put the powdered drink mix in a big mug. Add enough water to bring it to a slightly watery pudding consistency-just enough to be able to mix easily.

    Add the other 5 ingredients. Mix very well with a big fork until it is silky smooth.

    Put the mug in the microwave for 3 minutes. ON TOP OF A BIG PLATE. Watch as is expands while cooking & contracts while cooling. Enjoy.

  11. Marinated Turkey

    Prep Time: 10 min
    Cook Time: 4-5 hours
    Yield: 18 Servings

    Marinade:
    1 cup apple cider vinegar
    1/4 cup chopped flat-leaf parsley
    1/8 cup olive oil
    1/8 cup fresh ground black pepper
    1/8 cup sea salt

    1 (5-6 pound) turkey breast

    Preheat oven to 300*F

    Combine vinegar, parsley, oil, pepper and salt in small bowl. Place turkey in oven bag and set in shallow roasting pan. Pour marinade over turkey in bag, seal, and bake 4 hours for a 5lb breast (5 hours for a 6lb breast).

    Remove pan from oven and let turkey cool in bag. Remove turkey, pour juices into large measuring cup, and refrigerate. Using 2 forks, shred turkey meat and discard bones, if any.

    Once reserved marinade has cooled, skim fat from top, drizzle over turkey.

  12. Frozen Walden Farms Treats (WF)
    (Silicone Ice Cube Trays Needed)

    Peanut Butter Fudgsicles

    Pour a little WF Chocolate Syrup in each cube. Mix some WF Peanut Spread with WF Caramel Syrup and put a bit on top of the Chocolate Syrup. Add more Chocolate Syrup to fill to the top of each cube.
    Freeze.
    Pop out & enjoy a delicious teat.


    Marshmallow Chocolate/Caramel Treats

    Pour a little WF Chocolate Sauce into each cube.
    Top with a dollop of WF Marshmallow Dip.
    Add a bit of WF Chocolate Sauce to the top.
    Freeze.
    Pop out & enjoy a delicious treat.

  13. Spaghetti with Meatballs

    5oz lean ground turkey
    Italian seasonings for meatballs
    1 cup diced tomatoes
    1/2 cup grated zucchini
    1/2 cup onion
    2 tsp olive oil
    1/4 cup chicken low-sodium, fat-free chicken broth
    1 package Shiritaki spaghetti noodles

    Preheat oven 375*F

    Season lean ground beef with Italian seasonings. Roll into approx 8 meatballs. Place meatballs in oven and bake for 20-25 min until cooked through.

    Saute onions & zucchini in olive oil, do not let the onions caramelize. Add tomatoes & chicken stock. Let simmer with Italian spices.

    Prepare Shiritaki noodles as directed on package.

    Add cooked meatballs to the tomato sauce and stir to coat.

    Place noodles on a plate, add meatballs & sauce.
    Mange!!!
